<p>Brindar a los participantes los conocimientos te&oacute;ricos y pr&aacute;cticos necesarios para el desarrollo de an&aacute;logos de carne mediante tecnolog&iacute;as emergentes como la impresi&oacute;n 3D y la extrusi&oacute;n termopl&aacute;stica, integrando el uso de herramientas estad&iacute;sticas para optimizar formulaciones, procesos y propiedades sensoriales y nutricionales, contribuyendo a la innovaci&oacute;n en alimentos sostenibles y saludables.</p>
<p>El creciente inter&eacute;s por alimentos alternativos a la carne, impulsado por preocupaciones ambientales, de salud y de bienestar animal, ha generado una alta demanda de tecnolog&iacute;as innovadoras para el desarrollo de an&aacute;logos c&aacute;rnicos. Entre estas, la impresi&oacute;n 3D y la extrusi&oacute;n termopl&aacute;stica destacan como herramientas vers&aacute;tiles que permiten dise&ntilde;ar productos con texturas, formas y perfiles nutricionales personalizados, acerc&aacute;ndose cada vez m&aacute;s a las caracter&iacute;sticas sensoriales de la carne convencional.</p>

<p>Sin embargo, el desarrollo de estos productos requiere no solo de conocimientos en ciencia y tecnolog&iacute;a de alimentos, sino tambi&eacute;n del uso de herramientas estad&iacute;sticas que faciliten el dise&ntilde;o de experimentos, la optimizaci&oacute;n de formulaciones y el an&aacute;lisis de propiedades tecnofuncionales, sensoriales y nutricionales.</p>

<p>Por lo tanto, el curso busca fortalecer capacidades en estudiantes, investigadores y profesionales del sector alimentario, promoviendo la aplicaci&oacute;n de tecnolog&iacute;as emergentes y el pensamiento cr&iacute;tico en el desarrollo de alimentos sostenibles e innovadores. Adem&aacute;s, al enmarcarse como proyecto de proyecci&oacute;n social, se contribuye a la difusi&oacute;n del conocimiento cient&iacute;fico y tecnol&oacute;gico, fomentando la formaci&oacute;n de recursos humanos capaces de responder a los desaf&iacute;os de la seguridad alimentaria, la nutrici&oacute;n y la sostenibilidad en el Per&uacute; y la regi&oacute;n.</p>

<li>Aplicar tecnolog&iacute;as emergentes (extrusi&oacute;n termopl&aacute;stica e impresi&oacute;n 3D) en el desarrollo de an&aacute;logos de carne.</li>
<li>Seleccionar y formular ingredientes vegetales adecuados para obtener productos con calidad sensorial y nutricional.</li>
<li>Usar herramientas estad&iacute;sticas para dise&ntilde;ar experimentos, analizar datos y optimizar procesos.</li>
<li>Evaluar propiedades tecnol&oacute;gicas y sensoriales de los an&aacute;logos desarrollados.</li>
<li>Fomentar la innovaci&oacute;n y sostenibilidad en el dise&ntilde;o de alimentos alternativos.</li>
</ul>
<p>El curso se desarrollar&aacute; de forma presencial y contar&aacute; con 2 actividades te&oacute;ricas y 2 actividades pr&aacute;cticas.</p>
